Welcome to the Lake of Shadows Bistro Blog. My name is Chef Ronan Deery and I have been the Head Chef here in the Lake for the past eight years. Over the years my team and I have strived to provide the best quality food experience to a lot of happy customers. The first step in achieving this is by sourcing the best quality produce that the North-West of Ireland has to offer. This includes fresh fish from Greencastle auction located 40 minutes drive from the Hotel, our meat products supplied by Grants family Butchers on Buncrana’s main street, all dairy produce from Donegal creameries to name but a few.
Our Bistro menu here in the Lake changes every six months and is in constant development throughout those six months, with all new dishes being tested over and over again making little tweaks here and there until I am happy with a dish worthy enough to serve. My style of food I would have to say would be Retro, bringing back the dishes of the past and turning them into modern gastronomic delights is something I am passionate about. I also thrive on the challenge of coming up with dishes that are not found anywhere else around. I am incredibly lucky to be able to share my Passion and life’s work for great food with so many people.
